Produce prep:
Pull the leafy part of kale off any thick, tough, ribs, discard the ribs and chop or tear the leaves as directed.
Directions:
In blender combine ½ cup white rum, ½ cup Simple Syrup, ½ cup lime juice and 3 cups baby kale or chopped kale. Add 2 cups ice cubes; cover and blend until smooth. Garnish with lime slices. Makes 3 servings.
Simple syrup:
In a small saucepan combine 1 cup sugar and 1 cup water. Bring to boiling over medium heat, stirring until sugar is dissolved. Remove from heat; cool. Store, covered, in the refrigerator up to 2 weeks.
