Ultimate Summer Salad
Ingredients:
4 Roma tomatoes, seeded and diced
2 cucumbers, seeded and diced
1 green pepper, seeded and diced
1/2 small red onion, sliced
1/2 cup pitted black, or Kalamata olives (optional)
2 Tbsp. apple cider vinegar
2 Tbsp. fresh lemon juice
3-4 Tbsp, Good quality olive oil, or avocado oil
Sea salt and freshly ground black pepper, to taste
4 ounces Greek feta cheese, diced
Optional add-in ideas:
1/4 cup chopped flat-leaf parsley, no stems
1 Tbsp. fresh chopped dill
2 Tbsp. fresh chopped mint leaves
1 tsp. sumac (Turkish) seasoning
Instructions:
Toss all ingredients except feta cheese, gently in a large glass bowl. Let sit at room temperature for 1 hour.
Toss in the feta just before serving and taste for seasoning and adjust seasonings, as you wish.
