Cherry Tomato Margarita -- Healthy Cocktails with Benefits!

Cocktails with Benefits! 

They don't exactly sound like conventional margarita ingredients, do they? But this take on the margarita shows off the sweeter side of tomatoes.

And for a show stopping garnish, grill skewered tomatoes before adding to the drink!

Cherry Tomato Margarita

In a cocktail shaker combine 3 or 4 sweet yellow cherry tomatoes and a pinch of coarse or flaked sea salt; muddle tomatoes until broken up and juiced. Add 3 Tbsp. (1 ½ oz.) silver tequila, 1 Tbsp. (1/2 oz.) orange liqueur, 1 Tbsp. (1/2 oz.) fresh lime juice, and 1 Tbsp. (1/2 oz.) Simple Syrup. Add ice cubes; cover and shake until very cold. Double strain liquid into an ice-filled glass. If desired, add some of the muddled tomatoes. Makes 1 serving.

Simple syrup
In a small saucepan combine 1 cup sugar and 1 cup water. Bring to boiling over medium heat, stirring until sugar is dissolved. Remove from heat; cool. Store, covered, in the refrigerator up to 2 weeks.
