Ultimate Summer Salad

Ultimate Summer Salad

Ingredients:

  • 4 Roma tomatoes, seeded and diced
  • 2 cucumbers, seeded and diced
  • 1 green pepper, seeded and diced
  • 1/2 small red onion, sliced
  • 1/2 cup pitted black, or Kalamata olives (optional)
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. fresh lemon juice
  • 3-4 Tbsp, Good quality olive oil, or avocado oil
  • Sea salt and freshly ground black pepper, to taste
  • 4 ounces Greek feta cheese, diced

Optional add-in ideas:

  • 1/4 cup chopped flat-leaf parsley, no stems
  • 1 Tbsp. fresh chopped dill
  • 2 Tbsp. fresh chopped mint leaves
  • 1 tsp. sumac (Turkish) seasoning

Instructions:

  1. Toss all ingredients except feta cheese, gently in a large glass bowl. Let sit at room temperature for 1 hour.
  2. Toss in the feta just before serving and taste for seasoning and adjust seasonings, as you wish.
