Carrot Mexican Mule -- Healthy Cocktails with Benefits!
Today I am sharing a fun spin on the classic Moscow Mule cocktail. Moscow Mules are so popular right now you will almost always find one on the menu at your local bar. I love them because I love ginger beer and the fresh taste. Carrot goes really well with ginger so the addition of something semi “healthy” added a bit more flavor than the traditional Moscow Mule offers. This is my favorite version so far and is very festive for brunch, day drinking, or cocktail hour.

Directions:
In a cocktail shaker muddle 1 sprig rosemary and 2 slices fresh jalapeño chile pepper. Add ¼ cup (2oz.) carrot juice, ¼ cup (2oz.) silver tequila, and 1 ½ Tbsp. (3/4 oz.) lime juice. Add ice cubes; cover and shake until very cold. Strain liquid into a copper mug or glass filled with crushed ice. Add 1/3 cup chilled ginger beer. Garnish with a lime slice and jalapeño slice.
Makes 1 serving.
**Cocktail Tips
- Chile peppers contain oils that can irritate your skin and eyes. Wear plastic or rubber gloves when working with them.
- Use bottled fresh carrot juice or juice 2 fresh carrots with a juicer to equal ¼ cup.
